Fiber Cakes Recipe: These are my FAVORITE!
Ingredients
- 2 1/2 cups wheat bran (can substitute oat bran)
3/4 cup whole wheat flour (can substitute gluten-free flour--may need more water)
1 cup white grape juice concentrate
1 tsp baking powder
1 tsp salt
1/2 cups blueberries
DIRECTIONS
Boil water. Add fiber and allow to sit 10 minutes. Stir in flour baking powder salt juice and fruit. Scoop into 12 muffin cups with paper liners. Bake at 375 for 25 minutes
